Crockpot Christmas Breakfast Casserole Recipe
Print Pin Recipe Rate RecipeIngredients
- 12 eggs
- 1 cup milk
- 2 pounds hash brown potatoes
- 1 pound bulk breakfast sausage, cooked
- ½ cup onions, diced
- ½ cup bell peppers red & green , diced
- 1 ½ cups cheddar cheese , shredded from a block
- 1 ½ cups pepper jack cheese, shredded from a block
- 1 teaspoon kosher salt, if you use regular table salt use half as much
- ½ teaspoon black pepper
Instructions
- Spray the inside of the crock with no-stick cooking spray. Set aside.
- Mix the two shredded cheeses together and set aside.
- Mix the cooked sausage, onions, and peppers and set aside.
- Beat the eggs until well blended.
- Whisk in milk, salt, and pepper. Set aside.
- Layer ⅓ of the potatoes in the bottom of the crock.
- Next sprinkle with ⅓ of the sausage mixture.
- Top with 1 cup of mixed cheese.
- Repeat 2 more times to have a total of 3 layers.
- End with cheese mixture.
- Pour the egg mixture over the top.
- Cook on low for 8 hours.
Oven Instructions
- Prepare as directed, layering the ingredients into a large skillet.
- Bake at 375 degrees F for about 30 minutes, or until the eggs are cooked all the way through.
- Serve hot.
Notes
- Spray the crockpot well with nonstick cooking spray, because the cheese and potatoes tend to get all crispy around the edges. It's yummy but can stick if not greased well.
- Drain off the excess fat from browning the sausage. Breakfast meat tends to have a lot of extra grease, and you don't need that in the casserole.
- You can assemble and refrigerate up to 12 hours ahead of time.

🧾 Ingredients for this crockpot breakfast casserole
Everything in this holiday brunch casserole is simple, comforting, and easy to layer right in the slow cooker. No fancy steps, no weird holiday-only ingredients-just classic breakfast staples that come together into a warm, hearty dish while you sleep. Gather what you need, keep it nearby, and you'll have this prepped in minutes.

- Eggs - the backbone of every respectable breakfast casserole and the reason this thing sets up while you sleep.
- Hashbrowns - frozen, dependable, and far less dramatic than trying to grate potatoes at 10 p.m.
- Cheddar - sharp enough to contribute flavor, unlike certain relatives.
- Monterey Jack - melty, mellow, and the glue that holds this Christmas miracle together.
- Cooked sausage - savory, cozy, and absolutely required if you want the casserole to taste like "holiday morning" and not "hotel continental breakfast."
- Bell pepper - a pop of color so you can pretend this dish is balanced.
- Onion - chopped small so no one can pick them out and complain.
- Milk - the splash that makes everything creamy without turning it into egg soup.
- Salt & pepper - because even miracles need seasoning.
🔪 How to make this easy holiday breakfast
These step-by-step instructions make this casserole foolproof, even on the kind of morning when you're running on caffeine and holiday chaos. Follow the layers, set the timer, and let the Crockpot do every bit of the heavy lifting while you handle… well, everything else.

- Whisk the eggs, milk, salt, and pepper together in a big bowl like you're fixing to prove you can in fact multitask before coffee.
- Scatter a third of the hash browns into the bottom of the Crockpot. Think of it as laying down a cozy potato mattress.
- Spoon on a third of the cooked sausage, bell peppers, and onions - the colorful little confetti that makes this casserole feel festive instead of chaotic.
- Add a generous layer of cheese, repeat the whole situation two more times, and then pour the egg mixture evenly over the top like the domestic goddess you absolutely are.

You can! Thankfully, there's a little bit of lee-way when it comes to eggs out of their shells. After prep, cover the crockpot dish with plastic wrap or the lid and put it in the fridge until later that night.
I don't love how this Crockpot Christmas casserole comes out when the crockpot cook time and temperature have been altered. It usually takes 2½-3½ hours on HIGH, depending on your Crockpot. I think it makes the eggs tough so if you need to cook it in a short amount of time follow the instructions for baking it.
About 2 hours, same as any egg-based dish. After that, refrigerate or discard.

Wondering if I can shred my own potatoes…if they will cook appropriately?
Marye says
They should be fine.
Wanda says
Will this cook through if I double the recipe?
Marye says
I've never doubled it - you may need more time.
Kelly Usrey says
We had the same experience. It smelled delicious so we were quite disappointed when it lacked flavor. I will not be making this one again, unfortunately.
Katie Rowland says
The casserole made a hearty, savory breakfast. The left-overs reheat well in the microwave. My only suggestion would be to decrease the hash brown potatoes to 1 pound instead of 2.
Ashley says
This wasn’t very good. Texture was weird, cheese got chewy, it all got watery in the bottom of the crockpot. Lacked flavor. My kids like egg bakes but wouldn’t eat this. Now have to choke down what we can of the leftovers, most will prob get thrown out. Going back to tried & true recipes in the future.
Colleen says
Making again this Christmas because it was a huge hit last year.
