Chocolate crackle cookies are a classic – and they are one of those things that commercial bakeries really can’t replicate. A perfect crackle cookie has a crunchy exterior and chewy interior. These are beyond perfect because they also add a blast of heat. How much heat?
Well, you can decide for yourself.
Chipotle gives the homemade chocolate crinkle cookies a smoky heat that sort of evolves as you eat the it. Using dark cocoa creates a deep intensity and when it comes together … magic. Yummy, yummy magic.
By the way… crinkle cookies, crackle cookies… it’s all the same.
These chocolate crinkles can be rolled into balls, flash frozen, bagged, and then baked whenever you want some fresh cookies – it is really hard to mess them up. Be careful of over cooking them, it can take some practice to get exactly the temperature you want.
These cookies are so dark that they are almost black. They are really elegant for a black and white themed party. The remind me of Halloween, though.
I grew up in a The Wonder Years kind of neighborhood. All of us kids played kickball in the street until the streetlights came on… we played Rat Patrol and Combat… and everyone decorated for every holiday, including Halloween. One year when I was about 7 I had decided to be something scary. After many hours of hunting we found a Body Snatcher costume that was so frightening I just knew people would be scared into giving me a whole bowl of candy while they ran screaming into the night.
My dad was usually the designated adult and all of the kids in the neighborhood went from door to door in a big group with dad in tow. As it got later many of the kids headed home but this particular Halloween I begged to do just one more house. Dad went up to the door with me and we rang the bell.
The woman that came to the door was the scariest thing I had ever seen. Her costume was far scarier than mine and I ran away from that door as fast as I could – and was halfway down the street before Dad caught up with me. He picked me up and carried me home, and laid down with me until I went to sleep without even looking at my candy haul – I was terrified for a week by the spectre.
Years later, when I was an adult something happened that reminded me of that night and he and I remembered it together.
“Geez Dad, what was that costume? I had nightmares for a week.”
He threw his head back and laughed – a big, booming belly laugh. “It wasn’t a costume. It was a woman in her bathrobe with green night cream on her face and her dentures out. She was on her way to bed and decided to answer the door one more time.”

Chipotle Dark Chocolate Crackle CookiesPrint Add to Collection Go to Collections
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 to 1 teaspoon chipotle
- 3/4 cup Hershey’s Special Dark Cocoa
- 1/2 cup unsalted butter
- 1 3/4 cup sugar
- 4 eggs
- Confectioner's sugar for rolling
- Cream together butter and sugar.
- Add eggs, one at a time beating about 1 minute after each.
- Sift the dry ingredients together ad blend into butter mixture.
- Chill for 30 minutes.
- Preheat the oven to 325F
- Roll dough into balls
- Roll each ball in confectioners sugar and place on a lightly greased cookie sheet.
- Bake for 10 - 12 minutes or until puffed and done. You may need to experiment with the exact timing to get your favorite texture.
- Let cool about 5 minutes on the cookie sheet before removing.
