Spicy Roasted Cauliflower

Roasted vegetables are appearing on menus everywhere – and with good reason. They are easy to make and the roasting process brings out more flavor than you can even imagine.

I happen to love cauliflower. To be honest, there aren’t many vegetables I don’t like – I am not a big meat eater at all. Anyway, cauliflower has been a favorite my whole life. My mom use to cook it in milk and when it was done she would ladle it into a bowl, add a creamy, yellow pat of butter, and a few twists of pepper. It would come to the table, fragrant, milky steam wafting up from the bowl, the butter melting and creating puddles of color in the whiteness of the dish.

Broccoli and Pasta with Garlic Bread Crumbs

You can’t beat a pasta dish for being simple, fast, and delicious. I think I could eat pasta every day of the week… except I tend to have to stay away from carbs… and my family would probably revolt.

Still when I am in a hurry I tend to reach for pasta first.

This dish is full of flavor, texture, and and extra dash of yum.  It would be great with grilled chicken breast or shrimp added to it as a main course, or keep it simple and use as is for a fabulous vegetarian meal.

My frustration is the images in this post. We have had lots of rain and many of images lately have been taken with not-so-perfect light with my not-so-perfect camera. I tried seven ways to Sunday to try to get the weird color out of the images and couldn’t. I decided that they looked like 1970s Polaroids so that is how I am posting them.

Carrot Puree Is Not Baby Food

Sometimes I post things that make me think, What are you doing? They will think you have lost your mind! And then I remember that everyone thinks that anyway…

Carrot puree is highly underrated in my opinion. It should rate right up there with mashed potatoes but for some reason it isn’t. Truth be told, I like it better than mashed potatoes. It’s rich, creamy, and flavorful and it can be cute on the plate if you spend a few minutes with it.

Dr Pepper Jello Salad

In the Midwest they have a lovely tradition of calling jello desserts salads. This is to allow you to eat more sweet stuff and pretend that you are practicing healthy eating. “Well, I had four salads….so I can afford a little pie…”

So, if you are looking for a lettuce and celery salad you should probably go ahead and click out now because once you start reading you are gonna want to make this salad…and it won’t be something you can just walk away from. You will be committed.

I was not totally happy with the color but the flavor? Yummy. Cherry, Dr Pepper, pineapple, pecans, cream cheese….dang. What’s not to like?
