Vegetarian Lo Mein

Lo Mein is a favorite around here. Really. It is quick, easy, and super flavorful.
Shiloh has recently become vegetarian. Don’t ask me why. She was a hamburger addict until very recently, then overnight? Boom. Vegetarian.
One can only hope that she will grow out of her affection for Kraft Mac and CheeseĀ  as quickly.
I was vegetarian for years and then stopped for awhile, and then was again. If I had not met Marc and marriedĀ  him I would have gone back to my vegetarian ways after the divorce.
To me it is the easiest, most comforting way to eat.
Dishes like this allow me to cook the meat separately and add it to the Lo Mein as each person desires.
