Spicy BLT Dip – Fast and Fabulous!

You know that you do not want to be stuck in the kitchen New Years Eve OR New Years Day. I don’t. I want to spend time bonding with fifty of my closest friends and a bottle of expensive champagne. O.k. ten of my closest friends and a Dr. Pepper – but let’s not get picky, o.k.?

Probably the hardest thing about hosting a New Year’s Eve Party is deciding on the appetizers you want to serve. You want something that says you have taste but will not stain your carpet when someone has imbibed just a bit too much.

Love bacon, lettuce and tomato sandwiches? Yep so do I. And this dip has definitely got the flavor.  A big plus is that it is quick and easy, you can make it a day ahead of time, and it won’t cost you an entire month’s pay to create. Hot Spinach Artichoke Dip with Smoked Provolone

There are a lot of spinach artichoke dip recipes on the Internet, in cookbooks, and on tiny scraps of paper tucked away in scores of cookbooks. I know this because I have tried approximately 2.4 million of them. I adore spinach artichoke dip…I love the flavor, the texture, and the aroma. I like hot spinach artichoke dip on crackers, on sourdough, and in omelets and crepes.

I feel like the guy in Green Eggs and Ham. I will eat it on a train, I will eat it in the rain…I will eat it here or there…

As long as it doesn’t have mayo in it. I just do not like what happens to the texture of the dip when mayo is added and it is baked. No. I. Do. Not.

On New Years Day we were going to have an open house. It fizzled terribly and ended up being my family and one of my two partners in crime, Edye. I figured..hey, that’s o.k..more for us, right? More dip, more champagne, more snacks….and then I found out that Edye can’t drink champagne. Marc doesn’t drink hardly at all (I don’t either but even so he make me look like a lush) and so…I soon found that I had 3 bottles of champagne to drink…all to myself.

I didn’t drink them all. I am a responsible adult, and I hate getting drunk…. but I will admit to pushing the envelope just a little.

Anyway, Edye is the kind of  friend you want to taste your recipe experiments because she always has an effervescent and ebullient enthusiasm. So I wanted to make something that would knock her socks off…and knock my socks off, too.

This recipe has a ton of flavor. There is absolutely nothing mild or insipid about it. The texture is creamy, rich and gooey, while the flavor pops with spinach, artichoke, and a smoky flavor. You can use regular Provolone if you need to but smoked gouda would be a better substitution so you can get that smoky flavor.

This makes a great appetizer scooped up on top of a toasted slice of sourdough baguette with maybe some crumbled bacon on top. Keep it snack casual with crackers and chips, or keep it on the healthy side with fresh, raw vegetables. I think you will like the versatility of this.

I specify Philly cream cheese because that is what I use and what I like the best. I wish they did an organic version but they don’t. To my  mind the Philly has the best flavor and texture. There are few things I specify and almost never non-organic items but in this case it does make a difference.

And if you happen, just happen to have some left over? Spoon it in your omelet or roll it up in a crepe. Just sayin.

Hot Spinach Artichoke Dip with Smoked Provolone

  • 2 cups chopped artichoke hearts
  • 8 oz of Philadelphia cream cheese, softened
  • 1 lb chopped, fresh organic baby spinach, raw
  • 1 cup grated smoked Provolone
  • 1/2 cup good Parmigiano Reggiano
  • 1/2 cup grated smoke Provolone for topping
  1. Preheat the oven to 400F
  2. Mix the cream cheese. Parmigiano and the 1 cup smoked Provolone in the bowl.
  3. Stir in the artichoke hearts and spinach. Mix well.
  4. Spoon into a small baking dish and bake for 15 minutes.
  5. Add the 1/2 cup grated smoked Provolone to the top and cook until bubbly and brown.
  6. Serve hot.

Optional: You can sprinkle the top with 1/2 cup crumbled crispy bacon if you like…. you know..just a little added WOW.

Happy New Year

I know everyone is busy today but I wanted to stop in and wish you the very best for 2010.

2009 was a difficult year for many of us. I am praying that 2010 is not only a better year but it is the beginning of a better life. Each of us is given a gift of years and each of us has numerous opportunities to touch others and have a positive impact in their lives. I pray that this year is the beginning of wonderful things for each of you.

As you are watching football, eating all that wonderful food, and enjoying family and friends take some time for your self to sneak away and reflect on your life, where you have been and where you want to go. A fresh year, a fresh calendar, no mistakes, nothing to hold you back.

I can’t say that I believe in New Year’s resolutions but I can say that I love the clean slate that the New Year brings. Make the most of it…and visit often. I want to keep up with you and I have some great ideas for this year!

25 Fast, Easy,Last Minute Recipes for New Years Party Foods

Yeah, New Years is pretty much down to the wire, isn’t it? Whether you need a few last minute things to round out the table or you need a whole buffet of last minute appetizers we have ya covered!

Here are some quick and easy appetizer ideas

1. Run to the local store and pick up several good cheeses and some pears and apples, and maybe a pomegranate.  Slice the pears and apples thinly and lay a slice of cheese over each slice of fruit.  Add the pomegranate to the middle of the tray. Cut small clusters of red grapes to garnish. Serve smoked almonds.

Cheese to try:

  • edam
  • gouda
  • dubliner
  • cheshire
  • Tillamook aged cheddar
  • camembert
  • chevre -especially a peppered chevre..yum!
  • mimolette
  • manchego

For a nice pomegranate compote, check out this recipe from the California Pomegranate Council.

Holiday Pomegranate Compote

Seeds from 2 medium pomegranates, about 1-1/2 cups
1 tablespoon finely chopped orange zest
1 tablespoon orange juice
1/2 tablespoon grated fresh ginger
1 tablespoon honey
1/4 teaspoon salt

Gently fold together pomegranate seeds and remaining ingredients.

Makes 1-1/2 cups.

Try serving that with some Carrs Water Crackers and a slice of gouda.

2. Grab a shrimp platter. Take a Carrs Cracker, put a tsp of Thai sweet/hot chili on the cracker and top with a shrimp.

3. Savory Puff Pastry Squares -made with frozen puff pastry (it takes about 20 minutes to thaw!)

4. New York Times list of 101 appetizers you can make in 20 minutes or less!

5. Melt jalapeno jelly and pour over a block of cream cheese. Serve with crackers. I am odd, but I like it with graham crackers or Lorna Doones. Something about the combo of sweet/hot/tangy

6. Fondue- Seriously you can dip anything in melted cheese and have it taste good. Steamed tiny new potatoes, pearl onions, squares of french bread, apple, pear..whatever. This cheese fondue is another of Valli’s spectacular recipes!

7. Popcorn! Everyone likes it. Toss with a few sprinkles of taco seasoning.

8.  Make roll-ups. Take flour tortillas, spread with cream cheese, sprinkle with chopped green onion and dried cranberries, lay a slice of ham or smoked turkey over it and roll tightly. Cut on the diagonal in 3 or more pieces.

9. Fried Ravioli from Food Network starts with purchased ravioli. Rather than the marinara suggested make a

10. olive oil/garlic dip or….

11. a pesto dip.

How about a selection of foods; shrimp, chicken breast skewers, chips, tortilla chips, crudites, sliced fruit, toasted french bread, gingersnaps, vanilla wafers, even animal cookies- with dips like:

12. Chipotle Chili Black Bean Dip

13. Chevre Dip with Lavender & Honey

14. Pumpkin Dip

15. Mexican Cheese Dip
16 Hot Crab Dip in a Bread Round

17. Vidalia Onion Dip

If you want something more substantial try:

18.Apple Chicken Quesadillas

19.  Olive and sun dried tomato crostini

20. Pick up some artisan bread, like black olive or sourdough, and make small sandwiches with a slice of cheese and a fresh tomato.

21 . Seriously, buy Milky Way Bars and cut into 3-4 pieces. Slide on a skewer with a slice of banana, followed by a marachino cherry.

22.  Pour a big bag of Holiday M & M’s in a crystal bowl the middle of the table. Place big pretzel rods in a bowl of vanilla icing, sticking straight up. Guests take the pretzel from the icing and roll in the M&M’s. How cool are you?

23. Chex Mix. You know you want it.

24. Make skewers of small squares chocolate cake, followed by a cherry, followed by a small ball of cream cheese rolled in chopped pecans of walnuts. Call it Unconstructed Black Forest Cake.

25.  In a pinch take a stroll through the freezer section of the grocery. There are usually all kinds of possibilities from mini cream puffs to guacamole.

The Best Make-Ahead Appetizer Recipes For New Year’s

We are now counting down the days until the New Year.

For us, New Year’s Eve has never been a big deal. We often play board games with the kids, or watch a movie because we are rather low key I suppose. I grew up in an alcoholic home and I dislike being around people who have had too much to drink. But there is always a place for good food in any holiday celebration so whether you are planning a big bash with 1,000 of your best and closest friends, or a quiet evening with those you love appetizers are probably part of it.

Over the net few days I am going to concentrate on “The Best New Years…Recipes” Make ahead appetizers, easiest appetizers, last minute appetizers, traditional foods for the buffet… Lots of great ideas to come!
