I’m Back and New Features on Restless Chipotle

I’m back!

I know I haven’t posted much – I have been busy enjoying my son, Chris, who was home on leave from Japan. It was the first time he was able to get leave time and come home in three years! He has been in Korea, Iraq (3 times), Kuwait, Alaska and who knows where else? All I know is that the hardest thing about having him in the military is not getting to see him for so long.

So, as I warned you at the beginning of the month, I was not going to be posting much. That doesn’t mean I didn’t cook. I have a bunch of recipes to post. Get ready!

Memorial Day Menu – Picnics, Potlucks, and Backyard BBQ

Memorial Day is almost upon us and with it come family get-togethers, church potlucks, picnics, and long days by the lake. There are hundreds of ways to celebrate this holiday, which has become sort of the opening day of summer.

The Significance of Memorial Day

Sadly, many of those celebrating don’t really know the significance of the day. So, before we move on to the food, let’s chat about what Memorial Day is and why it is celebrated.

Memorial Day was first established in 1868 to remember the soldiers that had fallen during the Civil War. It was then called Decoration Day. Over time Memorial Day was a day set aside to remember the fallen in all of the wars, those who have fought and died to give the rest of us the freedoms that we so casually enjoy.

Being Grateful

Memorial Day is a day to be grateful. I know that being grateful for things is not such a popular concept in our society; a society that seems to believe that they are owed certain liberties far and above the “life, liberty and the pursuit of happiness”.  Whether you are a pacifist or someone who believes in the need for a well trained and equipped military, the truth is that men and women have died in the process of preserving a way of life based on freedoms. And, we should be grateful; to them, to their families , and to those who currently serve in whatever capacity.

So, this Memorial Day, before you tuck in to the potato salad or grab for that ice, cold beer? Gather your family and friends, tell them that you love and appreciate them, and together say a prayer of thanks for those who deserve to be remembered.

And be glad that you can do so  without fear.

Menu for Week of August 16- 22 2010

Here is my menu for next week if you want to follow along. Most of these recipes should show up here…if they don’t? Don’t be afraid to leave a comment and ask me why I didn’t post the recipe!

Strawberry shortcake may show up for a breakfast or a quick lunch. It is a no brainer, really…Biscuits, lightly sweetened strawberries and vanilla ice cream.. I can’t really give you a recipe for it… :)   I haven’t decided on the meal order yet..but here are the basic meal plans… oh and my notes. When I make menus I make notes to myself so that I can remember what I was planning!

New Year’s Eve Menu: Dinner

I thought that in addition to some recipes I hope to get posted I would do a couple of round-ups of various menus you might need for New Years Eve and New Year’s Day. I will try to keep them easy, amazing, and fantastic. You know…my usual stuff.

This first one is a dinner menu for New Years Eve. While your New Year’s Day menu should be comfort food and homestyle I think that a New Year’s Eve menu should be glitzy and sophisticated. Doing that and keeping it easy is not so..well…easy. This menu I have come up with seems a perfect balance of make ahead and glitz…an I even have included wine suggestions at the end.
