Doesn’t that sound dramatic? I feel like I should have yelled, “TA DA!” after that title.

This is seriously good stuff. Melt in your mouth meatloaf  with burst of flavor from pieces of dill pickles and sauteed onion. Tex-Mex Meat Loaf

Meatloaf is one of those foods that people either love or hate. It can be wonderful – moist, tender, flavorful… or it can be dry, tasteless and boring. it depends more on the cook than the ingredients, really. Meatloaf is a pretty standard formula of meat, vegetables, liquid, spices, and binder.  If over baked it will be dry, it is as simple as that.

Old Fashioned Meatloaf

A good meatloaf recipe is hard to find but a GREAT meatloaf recipe is a treasure.

Meatloaf is not hard to make and it is one of those great comfort foods that is good after it is made and it is great the next day. Leftovers make amazing sandwiches… if there ARE leftovers, and there probably won’t be.

The first time I made a meatloaf it was for my dad, about this time of year. It was for Valentine’s Day and since my mom was out of town I made a heart shaped meatloaf and pink mashed potatoes for Dad and I. As I recall he proclaimed the meal delicious and ate every bite…I personally think that was the night I became anorexic.
