Deep Chocolate Layer Cake with Marshmallow Mint Buttercream

chocolate cake

A few weeks ago Marc and I were grocery shopping and as we were wandering through the bakery section he spied a cake in one of the cases. It was a rectangular, chocolate layer cake with green filling between each layer and a fudge type frosting on top. When I looked at his face I just knew. For at least that moment in time I had been replaced in his heart…  Continue reading

Southern Caramel Cake with Jack Daniels

Caramel cake is a Southern specialty that you can find in almost any community or church cookbook below the Mason Dixon. Jack Daniels is a classic Southern mash whiskey and it is one of those things that finds its way into numerous Southern recipes from cakes to cookies. Praline is certainly Southern in both flavor and origins. What happens when you combine them all into one magnificent cake?

Suddenly you will say y’all. The front porch will be referred to as the veranda. The theme music from Gone with the Wind will play whenever you sweep down the stairs. And your irritating neighbors? Well, bless their hearts. Continue reading

Italian Cream Cake with Strawberries

I don’t know why it is but I associate strawberry desserts with Mother’s Day. Maybe it is the white-pink-red theme that just looks feminine? Maybe it is the fact that the berries come into season about the same time as Mother’s Day hits? I don’t know. It is one of those things that I think about in the middle of the night when I can’t sleep.

This cake is… FABULOUS. Perfect for Mother’s Day or any other celebration, including the fact that you got through the day without harming your teenager. If you don’t have a teenager that might sound appalling but if you do – well you certainly understand. Continue reading

Dr Pepper Chocolate Cake

At any given birthday at my house there will be a chocolate cake. We come from a long line of choco-holics and it has obviously been passed down to for at least four generations at this point. No doubt there will be more. Hershey, Godiva, Nestle… they needn’t worry about going out of business on our account. In fact, if you own stock in these companies you should fee quite secure.

Ready for more Dr Pepper goodness? Continue reading

Spice Cake with Cream Cheese Frosting and Smoked Pecans

Spice cake. You know, there are fabulous spice cake recipes out there and terrible ones. Spice cake is admittedly not my favorite…it makes me think of the school lunch cafeteria in Jr. High school. Squares of stale boxed mix spice cake, with a decidedly artificial flavor and too sweet frosting….ick.

This cake is not that. It is to a boxed mix what Pavarotti is to singing in the shower. The cake is spicy, full of the flavors of cinnamon (Vietnamese please), freshly ground nutmeg, citrus scented cardamom, spicy cloves and ginger…and all spice just in case we don’t have all the bases covered with the other spices.

Then a whipped (yes I did say whipped) cream cheese frosting and filling adds richness and almost too much sweetness. What to do? How about some smoked and salted pecans to round out the flavors and make your mouth happy.

Here’s another thing. You DO know that you can create your own cake mixes right? I mean if you need that time saving factor (raises hand…) you can mix the dry ingredients and keep them in a tightly covered mason jar in your pantry for a couple of months. Some rainy weekend afternoon? Just call the kids in and makes a bunch of cake mixes! You can use dry milk if you like to make it where you only need to add water but I prefer just to leave the dry milk out and use real milk. When you are ready to bake just cream the butter and eggs, add the dry ingredients alternately with the milk and vanilla (or other flavoring) and …Voila!

The texture will be a bit more coarse than a conventially mixed cake because the sugar isn’t creamed in with the butter but it will be a million times better than the boxed mix.

O.k…So …. on to the spice cake.
