July has been one of the busiest, worst, most stressful, hellacious, defeating months on record in this house. It seemed like we moved from problem to problem and drama to drama until here we are, the last day of the month, and everything is caught up, all my deadlines are met, bills are paid, and all is right with the world…finally.

Bacon Cheeseburger Meatloaf Recipe That Will Change Your Life

Doesn’t that sound dramatic? I feel like I should have yelled, “TA DA!” after that title.

This is seriously good stuff. Melt in your mouth meatloaf  with burst of flavor from pieces of dill pickles and sauteed onion. Bacon on top releases flavor into the meatloaf and gets crispy as it bakes. Right before taking it out you lay  a couple of pieces of American cheese over top.  Continue reading

Tex-Mex Meat Loaf

Meatloaf is one of those foods that people either love or hate. It can be wonderful – moist, tender, flavorful… or it can be dry, tasteless and boring. it depends more on the cook than the ingredients, really. Meatloaf is a pretty standard formula of meat, vegetables, liquid, spices, and binder.  If over baked it will be dry, it is as simple as that.

Italian Wedding Soup

Italian Wedding Soup has nothing to do with weddings. Sad, but true.

You know I always pictured a chaotic, joyful wedding scene with people happily slurping up this particular soup. I figured there was some sort of symbolism in the ingredients. I had woven an intricate web of romantic possibilities around the recipe. And none of them are true. Not one.

It seems that the name comes from an Italian phrase, si sposono bene, which means that two things are well married; they go together well. It may have been served at a wedding or two but only because it is delicious, not because it is symbolic. Another fantasy lost. Continue reading

What’s in That? Hamburger and Ground Beef

Yeah.. you are gonna hate me. I am about to ruin your hamburger habit. Ground beef?  Let’s chat.

Did you know that the FDA actually notes a difference between hamburger and ground beef? Hamburger can have up to 30% added beef  fat (from any source…trimmings, etc) while ground beef cannot have added fat; only what is in the particular cut that is being ground.
