Easy Eggplant Parmesan Recipe that Will Knock Your Socks Off

I love Eggplant Parmesan. I don’t eat it very much anymore because, at the moment, I am the only one in the house that likes it. My eldest daughter and her husband love it so I don’t make it unless they are going to be around to help eat it.

Eggplant is pretty easy to grow, at least here in Texas. If you have a garden I recommend adding an eggplant (is that eggplant plant? eggplant bush?). The flavor when it is fresh is delicate and addictive – not a bit bitter.

Steak and Eggs… and Avocados

It is no secret around here that I love avocados. They are rich, and creamy and have a delicate flavor which goes with almost anything.

I have to stay pretty low carb because I had to have my thyroid removed and, despite the fact that I love baking, carbs blow me up like a balloon. I keep them to a minimum, taking a bite to taste when creating a recipe but other than that I try to steer clear. Avocados are luxurious enough to stand in for carbs and make me feel like I have had a treat.

Old Fashioned Lemon Meringue Pie

When I was in the military I was stationed in Monterey, California to learn Czecheslovakian – not a bad way to spend your military time, by the way. This was eons ago but there used to be a place down on Cannery Row that had a huge Merry-Go-Round in the center and they made these pies that had at least four feet of meringue on them. Chocolate Cream Pie Cupcakes

Is there anyone reading this, right now, that does not like chocolate cream pie? A show of hands please?

Yep, I didn’t think so. For most of us chocolate cream pie is an adventure in connecting with our inner piggy. Sweet and crunchy graham cracker crust, creamy chocolate filling and that cloud of perfect meringue piled on top – well that creates something even most restaurants can’t screw up.

Best Homemade Pasta Dough Recipe…Ever

I was going to post my Chicken Alfredo Lasagna recipe today and then I remembered that I wanted to post this homemade pasta dough recipe first so that you could really make a lasagna that would make your entire family (including random inlaws) drool.

Don’t get me wrong – store bought pasta is fine. Better when it is organic but …all in all… it does the job. It just doesn’t do the job as well as this homemade kind… which isn’t hard to make. It’s sort of like saying that a pair of sneakers will work fine with that sexy little black dress… but if possible a pair of Betsy’s would be so much better.
