I have three kids with July birthdays in the first two weeks so parties are usually planned as one large event. This year we missed Matthew because he is in Korea, happily ensconced in adulthood. He turned 20 today, actually. Sigh. So hard to believe.

Kyrie’s birthday is on the first and Nick’s is on the third so having a party that both will enjoy is imperative. Since Despicable Me is a favorite move AND since I had pinned some adorable Minion cupcakes on Pinterest the only thing left to decide was the flavor. Continue reading →

Chocolate Cream Pie Cupcakes

Is there anyone reading this, right now, that does not like chocolate cream pie? A show of hands please?

Yep, I didn’t think so. For most of us chocolate cream pie is an adventure in connecting with our inner piggy. Sweet and crunchy graham cracker crust, creamy chocolate filling and that cloud of perfect meringue piled on top – well that creates something even most restaurants can’t screw up.

When I was a kid I was addicted to those commercially created chocolate fried pies. Maybe they were something we only get around here but OMG they were sooooo good. I was so excited when I got my driver’s license because not only did it mean freedom – it meant I could pick up one of those fried pies on the way to school without my mother pointing out the zit-producing potential of what I was eating… for breakfast…. Black Velvet Cupcakes with Orange Filling

Although we choose not to celebrate Halloween I have been wanting to create a black velvet cake for awhile – and what better season to do it in?

I thought that black velvet would  be elegant with snowy white frosting at a formal event, and look very contemporary with pink frosting for a birthday…. Since neither of those things were on my calendar I decided on Black Velvet Cupcakes with Orange Cream Cheese Filling and Frosting.

I always sort of struggle with variations on red velvet cake… I mean, to me red velvet is one flavor and pink velvet should be another..and black velvet should be another..they shouldn’t taste the same with different colors, you know?  Continue reading →
