Lofthouse cookies are a recipe that I have been trying to re-create for most of my adult life. I have so many good memories attached to them that eating them is (in most cases) a guaranteed way to lose the blues.

When I was little we lived just outside of Philadelphia in the smack center of probably one of the most historic areas of the United States. You couldn’t drive a mile without passing stone houses that were built in the 1600s and had witnessed war, peace and everything in-between for over 300 years. I didn’t have to learn about the mules that pulled flatboats along the canals because I visited those canals many times, and viewed the faded trails that the animals trudged along day after day.  History was a living thing to me, sometimes more real than the world I lived in and I escaped to the woods more than once to hunt for arrowheads, musket shells, and other relics of those who had walked those woods before me. Black Velvet Cupcakes with Orange Filling

Although we choose not to celebrate Halloween I have been wanting to create a black velvet cake for awhile – and what better season to do it in?

I thought that black velvet would  be elegant with snowy white frosting at a formal event, and look very contemporary with pink frosting for a birthday…. Since neither of those things were on my calendar I decided on Black Velvet Cupcakes with Orange Cream Cheese Filling and Frosting.

I always sort of struggle with variations on red velvet cake… I mean, to me red velvet is one flavor and pink velvet should be another..and black velvet should be another..they shouldn’t taste the same with different colors, you know?  Continue reading

Pumpkin Pie Cupcakes

When it starts cooling down I want spicy aromas and flavors coming out of my kitchen. These cupcakes are a little time more time consuming than your basic vanilla or chocolate but I think you will agree, after one bite, that they are just SO worth it!

The pumpkin cupcake is spicy and the pumpkin flavor is strong because you are going to roast the pumpkin before you use it. It is filled with a rich cream cheese filling, swirled with a creamy brown sugar frosting and then topped with a sprinkle of crunchy pie crust bits that have been sugar glazed. Continue reading

Italian Cream Cake with Strawberries

I don’t know why it is but I associate strawberry desserts with Mother’s Day. Maybe it is the white-pink-red theme that just looks feminine? Maybe it is the fact that the berries come into season about the same time as Mother’s Day hits? I don’t know. It is one of those things that I think about in the middle of the night when I can’t sleep.

This cake is… FABULOUS. Perfect for Mother’s Day or any other celebration, including the fact that you got through the day without harming your teenager. If you don’t have a teenager that might sound appalling but if you do – well you certainly understand. Continue reading
