Comeback Chopped Salad

Comeback sauce is a Southern thing…maybe the whole comeback mentality is Southern, I don’t know. You don’t hear the term up north unless you happen to see someone chasing a guy that stole their wallet.

I have lived up north, east coast, west coast, deep south, and Texas. You have to say Texas seperately because we tend to think of it as it’s own territory down here. Like the Vatican, Washington D.C…. you know, we are the state that is separate but equal.

I have loved everywhere I have lived… ummm, well Camp LeJeune, North Carolina…not so much. Other than that? I learned to love the afternoon rain in Florida, the amazing foliage on the east coast, the fresh food and proximity to the sea in Monterey, the incredible produce in Michigan….but, Texas is my home. I think I have finally accepted that and I am not desperate to live somewhere else like I once was. I realize that I have moved enough that it has given me the unique opportunity to choose my home state, and I choose Texas, y’all. Geckos, tarantulas, et al.

I have left Texas but I have always… Come Back.

Anyway… Comeback is one of those phrases you hear often. It is a friendly way of saying, “I like your face.” “Visit again” “I think you are awesome”.

So, it is only fitting that the south have something called Comeback sauce. Because you will comeback for more.

This chopped salad is gonna make you comeback, all right. It is easy to do, looks amazing (despite my crappy images here) and is delicious. I used Oxford Falls Comeback Sauce because Jim is a friend and I like the products he puts out. Of course, he is from Mississippi not Texas but I can overlook small flaws. I am generous like that.

The salad is a mixture of black beans, pecans, onion, cilantro, avocado, tomato, black olives, bell pepper, lettuce, cucumber, hard boiled egg, crushed corn chips, smoked gouda, and anything else you might want to put in it. Chop everything to approximately the same size and mix with the sauce. Let chill for about 30 minutes and you are good to go.

The comeback sauce is slightly spicy, and it holds everything together without overpowering it.  All natural ingredients. Small company. Gotta love it.

This is a great side salad or light lunch. Go for it…you will comeback to it. I promise.

Comeback Chopped Salad

  • 1/2 cup finely chopped red onions
  • 1/2 cup chopped pecans
  • 1/2 cup chopped black olives
  • 1/2 cup chopped bell pepper
  • 2 hard boiled eggs chopped
  • 1/2 cup cooked black beans
  • 1/2 cup chopped cilantro
  • 1/2 cup broken corn chips
  • 1/2 cup chopped avocado
  • 1/2 cup tomato chopped (heirloom is best)
  • 1/2 cup cucumber chopped
  • 1/2 cup smoked gouda chopped
  • 1 chipotle in adobo, finely chopped – optional
  • Salt and pepper to taste
  • 1 cup lettuce chopped
  • Lettuce leaves for serving
  • about 1/2 cup Oxford Falls Comeback Sauce (more or less to taste)

Mix everything except the lettuce leaves together gently. Allow to stand in the refrigerator for 30 minutes. Check flavor and add salt and pepper as needed.

Serves 8

Jim did not promise me his first born child for a good review…which is good since I have 8 kids and I am not keen on another one… I tried to get him to give me a vacation on the French Rivera but he could only manage a weekend on the Mississippi coast…which I declined. He does not want the sauce back when I am through with it. I will probably order more at my expense because I like it.
