Maybe I should re-title this Breakfast in HeavenĀ because this, my friends, these chocolate waffles are my idea of a delicious breakfast. Dark cocoa adds a rich chocolate flavor and the pecan syrup fills those little holes perfectly. So good. It would be even better with a scoop of vanilla ice cream over the top and the hot syrup spooned over that – but then you probably wouldn’t want to have them for breakfast. Chocolate Cream Pie Cupcakes
Is there anyone reading this, right now, that does not like chocolate cream pie? A show of hands please?
Yep, I didn’t think so. For most of us chocolate cream pie is an adventure in connecting with our inner piggy. Sweet and crunchy graham cracker crust, creamy chocolate filling and that cloud of perfect meringue piled on top – well that creates something even most restaurants can’t screw up.
When I was a kid I was addicted to those commercially created chocolate fried pies. Maybe they were something we only get around here but OMG they were sooooo good. I was so excited when I got my driver’s license because not only did it mean freedom – it meant I could pick up one of those fried pies on the way to school without my mother pointing out the zit-producing potential of what I was eating… for breakfast…. Bailey’s Deep Chocolate Rolo Cookies
There is only one more thing better than chocolate and you know what it is, right? More chocolate….and booze….. in a form you can eat out of your hand. Yes, they could be better – they could have 0 calories but that just isn’t happening.
Rolos are like gold around here. You can get a bag of them and bribe my kids to do almost anything. I used the basic Rolo recipe in my cookbook and then I posted a peanut butter version here on the blog… I suppose it was just time to take them one step farther…

Chocolate Chile Muffins
A few weeks ago I was invited to participate in the Marx Foods Chile Recipe Challenge. I was told I would recieve a box of a variety of dried chilies and I was to create an original recipe using at least one of them. As long as I posted it before September 9 I was good.
I was looking forward to it. After all, there are hundreds of different kinds of dried chilies but most people only know about a few of them. How cool is it to get to experiment with the unique flavors of unusual chilies?
Very cool.
One chile in particular intrigued me. It was a large, dark chile called a Mulato and the description said, “Mild. Flavor : chocolate and licorice.
I knew I wanted to use it in something baked. I wanted to use flavors that would not overpower the delicate chile flavors but would instead enhance it. Chocolate but not too much chocolate. Sweet but not too sweet. Muffins!
I was going to put chocolate chips in them but soon realized that my kids had snacked away my chocolate chip stash so I made them without. Feel free to add chocolate chips to yours; I’d suggest bittersweet. Continue reading
