Meyer Lemon Meringue Pie Cheesecake

Meyer lemons have finally made it to the stores around here. If you aren’t acquainted with them you’re missing out on some great flavor. The skin of the lemon is orangy and the flavor is soft and mellow lemon. There isn’t any of that sharp tang that makes your face pucker up.

Plain, lemony goodness that will leave everyone wanting more. So, I was shopping and I saw a bag of these beauties in the produce area. Have you noticed we no longer have produce aisles anymore? They are produce areas.  Continue reading

Pecan Praline Cheesecake

My first introduction to cheesecake, at least that I can remember, is the pineapple cheesecakes that my  mom used to buy the Saturday nights it was her and Dad’s turn to host the weekly card game with three other couples. It was the 1960s and getting dressed for dinner, inviting people over to play cards and drink scotch, and serving fancy food was very trendy. I really miss those days. I loved to watch my mom get ready for a party – she seemed to be so much better at it than I am now. She would carefully cut ring bologna, salami, and cheese into uniform size cubes and put them on fancy toothpicks. She’d cut the bakery purchased, pineapple cheesecake into squares and put them on pretty dessert plates with matching coffee cups. Continue reading

Holiday Hot Buttered Rum Pecan Pie Cheesecake…with Toffee

I have a hard time naming recipes and I don’t think I am the only one. Whereas decades ago people gave cakes imaginative names like:

  • Orange Kiss Me Cake
  • Hummingbird Cake
  • Shoofly Pie

Nowadays they are more likely to give it a string of names that describe the ingredients – a sad loss of creative verbiage in my opinion.

So, in the spirit of the Holidays which are, even as we speak, ringing the doorbell  I wanted to give this cheesecake a name that represented everything it is.

Red Velvet Cheesecake

My son is home for the first time in three years. He is in the  Air Force, stationed in Northern Japan, and it is difficult for him to get leave time.

A lot can change in three  years; for both of us.

Excited? Me? Yeah!

So, as a result…as I told my Facebook readers… I won’t be online as much, nor will I post as much.

One of Chris’s favorite desserts is Red Velvet Cake. I wanted to make him something special to welcome him home…and I think I succeeded.
