Maybe I should re-title this Breakfast in Heaven because this, my friends, these chocolate waffles are my idea of a delicious breakfast. Dark cocoa adds a rich chocolate flavor and the pecan syrup fills those little holes perfectly. So good. It would be even better with a scoop of vanilla ice cream over the top and the hot syrup spooned over that – but then you probably wouldn’t want to have them for breakfast. Happy 100th Birthday, Oreos!
Today, March 6, 2012 is the 100th birthday of Oreo Cookies. I do know a few people that don’t love Oreo cookies – but not many. Oreos have become a cookie icon in their 100 year history. Even I, organics-make-it-yourself freak that I am cannot resist the siren song of the Oreo.
As I was leafing through my blog (can you say that? I mean electronic leafing) I realized that I have numerous recipes that include Oreos as an ingredient. I thought posting a list of the recipes would be a great way to celebrate 100 years of twisting and dunking. Ready? Continue reading

Chocolate Chip Cookies
Who does not like chocolate chip cookies?
I don’t know of anyone. Even people that don’t get real excited about chocolate ( and I find people like that a little unsettling, don’t you?) do usually like chocolate chip cookies. It really only comes down to two questions; Chewy or crispy? Thin or thick?
I will be honest with you. I like my chocolate chip cookies to be crispy on the outside and chewy on the inside, with a deep buttery -almost-salty flavor. I want them to be thick but not cakey. I am extremely picky about chocolate chip cookies, so when I say that these are the absolute best that I ever had, well I mean it.

Saturday Surfing
The tree outside my bedroom window, the one that HASN’T fallen down from wind, flood, or snow, has tiny pinkish leaf buds on it. Could it be true? Is spring on its way?
Dang, I hope so. I am tired of cold weather, ready for warmth and summer and sitting on the porch. Excuse me, sitting on the veranda. January might be the first of the year but I have always felt that spring was. It seems more natural a beginning to me. I am excited about my new life, the opportunities that are popping up everywhere, and finally (I hope) getting my kitchen finished this year. With the new book deal (Complete Idiot’s Guides… to be published for Mother’s Day 2011 – cookbook ) I should have enough to do the restoration/remodel on the kitchen. YAY!
