Lofthouse cookies are a recipe that I have been trying to re-create for most of my adult life. I have so many good memories attached to them that eating them is (in most cases) a guaranteed way to lose the blues.

When I was little we lived just outside of Philadelphia in the smack center of probably one of the most historic areas of the United States. You couldn’t drive a mile without passing stone houses that were built in the 1600s and had witnessed war, peace and everything in-between for over 300 years. I didn’t have to learn about the mules that pulled flatboats along the canals because I visited those canals many times, and viewed the faded trails that the animals trudged along day after day.  History was a living thing to me, sometimes more real than the world I lived in and I escaped to the woods more than once to hunt for arrowheads, musket shells, and other relics of those who had walked those woods before me. Italian Wedding Soup

Italian Wedding Soup has nothing to do with weddings. Sad, but true.

You know I always pictured a chaotic, joyful wedding scene with people happily slurping up this particular soup. I figured there was some sort of symbolism in the ingredients. I had woven an intricate web of romantic possibilities around the recipe. And none of them are true. Not one.

It seems that the name comes from an Italian phrase, si sposono bene, which means that two things are well married; they go together well. It may have been served at a wedding or two but only because it is delicious, not because it is symbolic. Another fantasy lost. Continue reading

S’Mores Monkey Bread

Monkey bread. One of those weird food names that seems to have always been around but no one can find the origin of. It’s a fun bread whether you make it sweet or savory –  this one as you may have guessed) is sweet.

Warm and gooey, crispy-crunchy, rich and sickeningly sweet, s’mores are the stuff that childhood memories are made of. Pecan Crusted Chicken with Jack Daniels BBQ Sauce

Fried chicken is a southern staple, and I am not talking about KFC or Churches, either. There was a time when Southern women vied for who could make the best, crispest fried chicken – and in some lucky communities the tradition continues.

Usually buttermilk is part of the equation and for good reason. Buttermilk has acids in it that begin to break down the meat, making it tender. Quick Burrito Casserole

If you love burritos and lots of Mexican flavor this easy, family friendly casserole is one that you will definitely want to add to your recipe box. You can make it to the point of baking ahead of time, refrigerate, and then bake it just before serving or cover it tightly (unbaked) and freeze for a handy freezer meal.

It is just as good with less meat, so if you want to cut the (all ready low) cost of this dish just use less beef and more beans.
