My kids broke into the oatmeal before I got a chance to figure out how I was going to use the packages I got. That right there should tell you something. It wasn’t until this afternoon that I was able to rescue what was left and decide what to do.

I used the blueberry muffin oatmeal and I decided to make blueberry oatmeal chocolate chip cookies. Really, when you consider that the oatmeal has flax and other whole grains for fiber and omega – 3s you don’t have to feel bad about eating cookies, muffins, or anything else you make with Better Oats products.

The cookies were delicious and fit right in with the others on the cookie tray I was making for Christmas. I tweaked these from a recipe I found at Brooke Bakes.

Oatmeal Blueberry Chocolate Chip Cookies

Prep Time: 5 minutes

Cook Time: 12 minutes

19 minutes

Yield: 3 to 4 dozen

Oatmeal Blueberry Chocolate Chip Cookies

RIch with fiber and Omega -3s, these cookies are a delicious treat fro breakfast or snacks.

Ingredients

  • 6 packets Blueberry Muffin Oatmeal by Better Oats (about 2 cups)
  • 1 cup organic white flour
  • 1/2 tsp. baking soda
  • 3/4 cup white sugar
  • 1/2 cup unsalted butter
  • 1/2 teaspoon vanilla
  • 1 teaspoon fresh orange or lemon zest
  • 1 tablespoon buttermilk
  • 1 cup bittersweet chocolate chips
  • 1 egg

Instructions

  1. Preheat oven to 350 degrees F
  2. Lightly grease cookie sheets or line them with silpat.
  3. Mix dry ingredients in a large bowl.
  4. Mix in citrus zest.
  5. Cream together the butter, sugar, and vanilla.
  6. Beat in the egg and buttermilk.
  7. Combine the butter mixture with the dry ingredients until well mixed.
  8. Fold in chocolate chips.
  9. Drop by rounded teaspoon on prepared baking sheets.
  10. Bake for 10 -12 minutes.
  11. Let cool for 5 minutes before removing from sheets.

Notes:

You can substitute white chocolate chips for the chocolate ones in this recipe if you like.
