Mexican Turkey (or Chicken) Casserole

You may have noticed that normally my recipes have 57 ingredients and 82 steps. I do this because I think it makes me look authoritative and professional… And because usually I have a lot of odds and ends to use up.

This is not one of those recipes. Nope. It is easy, straightforward, and so simple that your  8 year old can put it together for ya. This is one of those dishes to make when the grandkids are staying overnight and all you have in the fridge is seven Weight Watchers frozen meals and half a jar of capers. Kid friendly, husband friendly, and great for potlucks, this casserole is slightly spicy, slightly gooey, and all the way good.

This is basic stuff. Feel free to add sauteed onions, canned black or pinto beans, olives,corn, chilies or all of them. Serve this with sour cream, chopped green peppers, lettuce, chopped avocado or whatever else you would like to put on it.

 The ingredients for this casserole are simple: Rotel, tortilla chips, cheese, and cooked turkey or chicken. Anything else is purely optional.

Just oil a 13×9 inch casserole dish – liberally.

Chop the cooked turkey and you don’t have to be a perfectionist about it. Seriously, there is enough stress in the world without being anal retentive about your knife skills – I don’t care what Gordon Ramsey says.

Add the crumbled chips to the bottom of the casserole. Resist the urge to taste one. Oh, and if you feel like you are short on chips? Just add some corn tortillas to fill in. No big.

Now sprinkle the cooked turkey over the chips. I told ya this was easy.

Add the Ro*tel over the turkey layer and spread it out pretty evenly. Don’t drain the can… just pour it on – juice and all.

Grate the cheese and mix it together. I like Pepperjack and cheddar but you can used smoked cheddar or whatever you like.

You know what’s next, right? Yep. Sprinkle a thick layer of cheese over the tomatoes. Now put it in the oven for 20 minutes while you clean up your mess (if you’re organized) or chat on facebook (if you are like me).

Pretty soon your kitchen smells awesome and this comes out of the oven. You probably won’t have to call the kids to dinner.

This is good stuff. The kind of dinners that don’t necessarily look great but they become a family tradition.

 Ingredients

  • 2 cups coarsely crumbled tortilla chips
  • 2 cups cubed cooked turkey or chicken
  • 2 15 oz cans Ro*tel tomatoes
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Pepper Jack cheese

 Instructions

  1. Preheat oven to 375F
  2. Grease a 13 x 9 inch pan
  3. Add tortilla chips to the bottom of the pan.
  4. Spread the cooked turkey over the chips.
  5. Pour the Ro*tel over the turkey.
  6. Sprinkle mixed cheese over all.
  7. Bake for 20 minutes.
