It’s All About the Pumpkin

It’s getting close to Thanksgiving…and then you know Christmas is waiting in the wings. Around here that means that it is a pumpkin time of year. Pumpkin pie, pumpkin cake, pumpkin muffins, pumpkin bread… Pumpkin just tastes like autumn – all spicy, rich, and earthy.

Needless to say there are a ton and a half (yes, literally a ton and a half) of pumpkin recipes on RestlessChipotle. So, if you love pumpkin as much as I do this list will be bookmarked, dog-eared, tagged, and drooled over.

How to Cook Pumpkin: Steaming or Roasting?

Do you use fresh pumpkins or buy canned pumpkin for your recipes? I have done both but I really prefer the fresh pumpkins – no surprise there, right? It doesn’t take long to steam them, especially in a microwave. Just cut themin half, seed them, and lay them hollow side down in a microwaveable baking dish. Microwave for 5 minutes or until tender.

Another way of doing it, and frankly the best way if you want a lot (and I do mean a lot ) of flavor is to roast your pumpkin. Also easy as….well, pie! Roasting a pumpkin gives it a deeper, sweeter flavor that holds up to any technique you want to use with it. Step by step instructions with lots of images on my post,  Pumpkin Smackdown Challenge.
