I love chiles rellenos. You usually find them made from poblano peppers or jalapenos at restaurants but I love them made with the colorful, little sweet peppers you find bagged at Costco and other grocery stores.
You can fill them with a variety of fillings and then fry them for a tasty lunch or appetizer. Really, they look more complex than they really are.
Some of the fillings I like to use are:
- Cream cheese mixed with chilies
- Pepper jack cheese
- Monterey jack
- Cheddar
- Ground beef, cooked and seasoned
Choose whatever you like, anything will work!
The batter is made from cornmeal and flour; you can choose to make it with ice cold beer or ice cold water, whichever you like.
Make a slit in the side of the pepper and fill it with filling, then press back together. Dip in the batter and then fry in hot oil until golden. Serve hot with ranch dressing, salsa, or any other sauce you like. Try some queso!
