Rolo Filled Chocolate Cupcakes with Praline Frosting

Chocolate cupcakes. Rolo candy. Praline frosting.

If there is anything more I need to say I honestly don’t know what it is. The chocolate cake is moist and tender – very chocolatey. You bite through the rich icing and into the dense cake and find yourself with a meltingly sweet Rolo oozing from the center.

Rolos are pretty darn popular here. They are right up there with sour patch kids – but I won’t be making cupcakes from those. Ew. We have a hard time keeping them away from Shiloh, especially – but all of us are pretty addicted to chocolate and caramel combos. Yum.

These are easy. A simple extra dark chocolate cupcake with an easy praline frosting (just leave the coconut and pecans out of the recipe)  is filled with one rolo and then topped with a second Rolo – you know, for posterity.

Nutrition info is based on the cupcake alone, without the frosting.

Chocolate Cupcakes Filled with Rolos

  • 1 cup unsalted butter, room temperature
  • 2 cups of sugar
  • 2 large eggs, room temperature
  • 2 egg yolks, room temperature
  • 2 1/2 cups all-purpose flour
  • 1/2 cup Hershey’s Extra Dark cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon of baking soda
  • Pinch of salt
  • 1 cup of buttermilk, room temp
  • 2 teaspoons of vanilla extract
  • 48 Rolos, unwrapped
  1. Preheat oven to 350F.
  2. Beat butter and sugar on high until light and fluffy.
  3. Add eggs and egg yolks one at a time, beat thoroughly after each addition.
  4. Blend flour, cocoa, baking powder, salt and baking soda, in a bowl.
  5. Add 1/3 of the flour mixture to the butter mixture and beat on low until mixed.
  6. Add ½ the buttermilk.
  7. Continue to alternate the flour and buttermilk, ending with the flour.
  8. Scoop into cupcake paper lined cupcake pans, about 3/4 full. Bake for 18-20 minutes.
