Dr Pepper Chocolate Cake

At any given birthday at my house there will be a chocolate cake. We come from a long line of choco-holics and it has obviously been passed down to for at least four generations at this point. No doubt there will be more. Hershey, Godiva, Nestle… they needn’t worry about going out of business on our account. In fact, if you own stock in these companies you should fee quite secure.

Ready for more Dr Pepper goodness?
This cake is rich and moist. I used a creamy ganache filling and a fluffy chocolate frosting. You can use just the frosting to fill the cake if you like. This frosting is nothing like the too sweet normal variety of  confectioners frostings. The heavy cream whips up to give it a light creamy consistency but with all of the rich deep chocolate flavor intact.

 

Recipe: Dr Pepper Chocolate Cake

Ingredients

  • 2 cups sifted all-purpose flour
  • 1 cup sugar
  • 1 cup firmly packed dark brown sugar
  • 1 cup Hershey’s Special Dark cocoa powder
  • 1-1/2 teaspoons baking soda
  • 1 cup Dr Pepper
  • 1/2 cup bittersweet chocolate chips
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup oil
  • 1-1/2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Grease two 9-inch cake pans and dust with cocoa.
  3. Stir together the flour, sugar, brown sugar, cocoa and baking soda.
  4. Heat the Dr Pepper in a small saucepan over low heat.
  5. Add the chocolate chips and whisk until melted.
  6. Remove from heat.
  7. Beat the eggs, buttermilk, oil and vanilla for 2 minutes.
  8. Slowly add the Dr Pepper mixture and beat for 1 minute.
  9. Add the dry ingredients, and beat at medium speed for 2 minutes.
  10. Divide the batter between two 9 inch pans.
  11. Bake for 30 minutes or until a toothpick comes out clean.
  12. Cool in pans for 15 minutes, then run a knife around the edge of the pan.
  13. Invert cakes onto cooling racks, allow to cool completely before frosting.

Recipe: Dr Pepper Chocolate Frosting

Summary: Whipped, creamy chocolate frosting

Ingredients

  • 1 c unsalted butter
  • 4 cups sifted confectioners’ sugar
  • 1/4 cup Hershey’s Special Dark cocoa
  • 1/4 cup Dr Pepper
  • 2 -4 tbs heavy cream

Instructions

  1. Using an electric mixer, beat the butter until light and fluffy.
  2. At low speed, gradually beat in the confectioners’ sugar and cocoa.
  3. Add the Dr Pepper and cream, and turn mixer to high speed until frosting is light and fluffy, about 1 minute.
