Old Fashioned Meatloaf

A good meatloaf recipe is hard to find but a GREAT meatloaf recipe is a treasure.

Meatloaf is not hard to make and it is one of those great comfort foods that is good after it is made and it is great the next day. Leftovers make amazing sandwiches… if there ARE leftovers, and there probably won’t be.

The first time I made a meatloaf it was for my dad, about this time of year. It was for Valentine’s Day and since my mom was out of town I made a heart shaped meatloaf and pink mashed potatoes for Dad and I. As I recall he proclaimed the meal delicious and ate every bite…I personally think that was the night I became anorexic.

Anyway…

This is a great recipe for meatloaf, and it is easy. you can add up to 1/2 cup finely chopped carrots, peppers, celery, or what ever else you want to sneak in. Just be sure the vegetables you add are finally  minced. If you want less pronounced onion flavor saute the veggies in a little oil before adding them to the meat. Panko crumbs are important. They give this meatloaf a great texture.

Classic Old Fashioned Meatloaf

  • 1 lb ground pork
  • 1 lb grassfed organic beef
  • 1 cup Panko
  • 1 cup organic tomato sauce
  • 1 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbs chopped fresh thyme
  • 1 cup finely chopped onion
  • 2 cloves finely chopped garlic
  • 3 eggs, lightly beaten
  1. Preheat oven to 350F
  2. Spray a glass loaf pan with PAM spray
  3. Mix the ingredients with your hands until well blended
  4. Mound lightly into pan with out packing down too much.
  5. Bake for 50 minutes or until done
