I have a close friend that is allergic to (horrors!) jalapenos. Yes. It’s true. However we discovered something amazing. She is not allergic to chipolte.
Yes. My friends are as weird as I am.
I was making chicken verde, actually something known around here as Stacked Enchiladas. It is sort of a chicken lasagne made with corn torillas instead of lasagne noodles… and sour cream and salsa verde rather than marinara. O.k. it is nothing like lasagne. Nothing at all.
Anyway, I was putting together the stacked enchiladas when I realized that I had made the salsa verde with jalapeno. Which meant, of course, that Edye couldn’t eat any of it. NO!

Thinking quickly I roasted another red pepper and cut it in half. I stuffed the pepper halves with a spicy chicken mixture and covered it with smoked cheese. I baked it along with the stacked enchiladas. When it came out of the oven it was incredible. Amazing. Delicious. Wow.

The roast red peppers are sweet and smoky from the roasting. The chicken mixture is tender and full of flavor with the smokiness of the pepper, the spiciness of the sauce, and the cool creaminess of the sour cream. The topping is a combination of smoked Gouda and Monterey Jack, the melting makes it creamy and rich. All together? The flavors explode one after one, first sweet then spicy then tangy then spicy again and finally a cool, smoky Southwestern flavor at the finish.

Ahhhhhh. This is not a party in your mouth. It is a whole freaking symphony. Really. If you don’t believe me, ask Edye.

I am entering this recipe into the Saucy Mama Recipe contest. I contemplated it because it was supposed to be party food, or something I would serve to friends. But this is easy to make and could easily be made ahead. Anyway, who in their right mind doesn’t like stuffed peppers? Yeah.
I used the lime chipotle marinade on the cooked chicken more as a sauce to give it flavor than as a marinade. The marinade is tangy and spicy but not so spicy that it will overpower the other flavors. It is perfect with the rest of the flavors in the pepper; the chicken, the roast poblano, the corn, the smoky cheese, and the earthy cumin. Full of Southwestern flavor, and if you use a rotisserie chicken from the deli you can have this on the table in less than 20 minutes.
Roast Peppers Stuffed with Spicy Lime Chipotle Chicken
- 2 boneless chicken breasts
- 2 cups chicken broth
- 4 large red peppers, roasted under the broiler or on the grill until the skins blacken
- 1 roast poblano, chopped
- 1 cup corn kernels
- 1 cup Saucy Mama Lime Chipotle Marinade, more to taste
- 1/4 cup onion, chopped
- 2 cloves garlic, chopped
- 1 cup sour cream
- 1 1/2 cup smoked Gouda, shredded
- 1/2 cup Monterey Jack, shredded
- 1 teaspoon cumin
- 1/2 cup chopped cilantro
- Poach chicken in the broth until it is tender. Cool and cut in small, bite size pieces. Save the broth for another use.
- Mix the chicken with the Saucy Mama Lime Chipotle Marinade.
- Mix the shredded cheese together and reserve 1 cup.
- Saute the onion and garlic until it is transparent and tender.
- Mix the sour cream, cumin, cilantro, poblano, cheeses, corn, and chicken together. Spoon into the roasted red pepper halves.
- Sprinkle the remaining cheese on the top of the chicken mixture.
- Bake at 375F for 15 minutes, or until cheese is bubbly and browned.
- Serve hot.

As I thought, New Boston Walmart doesn’t have Saucy Mama’s Chipolte Lime Sauce. I got a can of chipotles in Abuelo (isn’t that like ‘grandmother’s) sauce and also got fresh three Limes. I/m going to play like “I” am a “saucy mama” and see if that works : ) tee hee hee I bought all the ingredients today at Walmar for this and the Slow Cooker Mongolian Beef – my mouth waters just thinking about them! : )

Wonderful recipe.
I tried it with a homemade marinade made from guajillo, pasillo oaxaqueno and chipotle meco and would recommend trying your own marinade from chiles that are available. The smokiness of the pasillo oaxequeno works excellently with the recipe.
