Sweet and crumbly shortbread bars with a gooey pecan filling and a sweet praline topping.

Ingredients

    Base
  • 1/2 cup unsalted butter, room temperature
  • 1/3 cup sugar
  • 1 egg
  • 1 1/4 cups flour
  • Pinch of salt
  • 1 teaspoon vanilla
  • Filling
  • 2 eggs
  • 3/4 cup brown sugar
  • 3 tablespoons flour
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 cup chopped pecans
  • 1 cup browned coconut
  • Topping
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla

Instructions

    Base
  1. Cream butter and sugar until smooth.
  2. Add egg and beat to blend.
  3. Add flour, salt and vanilla and mix into a smooth dough (will be sticky.)
  4. Press into the bottom of a 13"x 9" pan and bake at 350 for 15 minutes.
  5. Filling
  6. In mixing bowl beat remaining 2 eggs until frothy.
  7. Beat in brown sugar.
  8. Add 3 Tbs flour,
  9. 1 tsp vanilla,
  10. 1/2 tsp baking powder
  11. pinch of salt and mix well
  12. Stir in 1 c chopped pecans and 1 c browned coconut
  13. Spread over cake and bake 20 minutes more.
  14. Cool.
  15. Topping
  16. Melt butter in saucepan.
  17. Stir in brown sugar until it is well incorporated into the butter and no graininess remains
  18. Remove from heat and spoon over cake. Cool completely
